STRAWBERRY OR CHERRY BARS

The cookie base is the same, choose your favorite topping.


1 C Margerine
1 C Sugar
1 t Vanilla
1/4 t Salt
1 egg
1 C White flour
1 C Whole Wheat flour

Strawberry Topping:
3 C Strawberries
1/2 C sugar
Lemon Juice to taste
Cornstarch

Cherry Topping:
3 C Sour Cherries
1 C sugar
Cornstarch

Cherry Candy Topping:
1 12oz. bag of white chips
1/4 C sour cream
4 t Margerine
4 oz dried Cherries
1 t Cherry flavoring
   Red food color

Cream sugar and shortning together, then add vanailla and eggs.

Sift flour and salt together.

Combine wet and dry ingredients and mix with electric mixer.

Press the dough evenly into a 9x13 pan and bake at at 350° for 20-25 minutes until until a toothpick inserted in the middle comes out clean.


FRUIT TOPPINGS:

While the bars are baking, Mix 2-3 Tablespoons of cornstarch with enough cold water to dissolve it. Heat the fruit to boiling and slowly add enough cornstarch to the fruit until it thickens (the amount varies with each batch of fruit), then cool the fruit mixture to lukewarm. When the bars are cooled, spread the fruit on top of the bars


CANDY TOPPING:

Melt the topping ingredients over low heat until blended. Using a spatula, spread the mixture to make a smooth coating over the bars.
